Chef
Lamberto Valdez Lara, the culinary director of Keraton at The Plaza, is the
mastermind behind the modern Mexican food experience at the hotel. He comments,
“I am extremely excited to launch a modern interpretation of the finest and
most popular dishes from my country, which I am confident that guests at
Keraton at the Plaza and local residents here in Jakarta will share my passion
when they come and experience the new menu.”
Using
premium ingredients, Chef Lamberto creates a menu that is different yet
familiar to the Indonesian palette. Popular menu items such as tacos,
enchiladas, burritos and fajitas are paired with unique ingredients such as
grilled nopal (grilled cactus), lengua (slow cooked beef tongue) and
huitlacoche (corn fungus). Chef Lamberto also uses custom made cookery, such as
the tortillera (tortilla press) to make his own tortilla from fresh masa (corn
dough) and flour dough.

As a
true believer of the farm-to-table approach, Chef Lamberto is determined to use
local produce where possible, personally selecting the freshest and finest
produce that Indonesia has to offer, including working with local farmers to
harvest the epazote, cactus and numerous
types of chili.
Inspired
by the Javanese word for “palace,” Keraton at The Plaza is a distinct and
intimate luxury hotel offering a unique, modern interpretation of the rich

offers 140 spacious guest rooms and suites, including four sumptuous Keraton
suites more than 135sqm each. Ranging in
size from 61 – 140sqm, each guest room and suite is a haven of Javanese luxury,
offering an open floor design with spectacular views of downtown Jakarta
through floor-to-ceiling windows. With
interior design by SCDA Singapore and the Burega Farnell, the sleek décor of
Keraton at The Plaza is inspired by the diversity of Indonesia’s geography and
culture, with splashes of color, rich woods, and intricate Batik floral
patterns. Artworks displayed throughout the hotel are commissioned to
Hadiprana, a famous Indonesian interior designer.
