The
Ritz-Carlton Jakarta, Pacific Place will present an exceptional gastronomical
event of the season on Thursday, 9 April 2015, featuring modern cuisine to
support fund raising for Yayasan Cheshire Indonesia and to give opportunities
for people with disabilities. Five renowned chefs across Indonesia will join
their creative talent to present an exclusive menu inspired by unique
ingredients from the archipelago.
Charity
dinners have become very popular and highly effective way of fundraising. It is
a perfect way to give back to the community. The top five chefs are Petty
Elliott, Arimbi Nimpuno, Andrian Ishak, Sandra Djohan and Sean Macdougall, the
hotel’s very own Executive Chef will prepare each one course as a part of a
5-course dinner paired with a fine selection of wine.
Guest
can indulge with menu selection of Pan Seared Scallops, Coriander Pesto,
Butternut Squash Purée; Donut Soup; Barramundi Woku En Croute, Woku Sauce;
Black Nut Beef, Deconstructed Rawon Sauce; Kaffir Lime White Chocolate, Melon
Mochi, Pandan Jelly; Indonesia Flavors in Chocolate. Price starts at Rp.
1,500,000++ per person for a five-course dinner inclusive of wine pairing.

Petty Elliott, a renowned journalist
and gourmet, has been writing about food and giving cooking demonstrations on
modern Indonesian Cuisine for more than eight years. Her book, Papaya Flower – Manadonese Cuisine,
Provincial Indonesian Food was published on 2009 and reflects her
upbringing, with an accent on the contemporary and modern using Indonesian
ingredients. Petty’s culinary background is a blend of Indonesian home cooking,
influences from Mediterranean Europe, as she had travel around the world and
time spent in UK.
Arimbi Nimpuno, grew up in Austria and
continued her formal studies in London for Commercial Arts and attained her Art
History degree in Florida and Renaissance Painting in Boston. Her passion for
culinary began at the age of 7, where she often watched her family’s personal
cook, worked in the kitchen. Since 2010 she has been very active in
contributing various lifestyle, table settings well as table manners and food
articles for different Indonesia magazines, such as Marie Claire, majalah Dewi,
majalah Clara, Prestige, Tatler.
Countless
articles have also been written about her and her culinary journey in
Indonesia. Arimbi is active in Yayasan Jantung Indonesia, since 2007, and is a
member in their Fund Raising Department. Her big portfolio events include
Argentinian Tango, Russian Ballet, Debutane Ball, and Chefs Dining. SKII has
also chosen her as Key Opinion Leader for their product since 2008.
Sandra Djohan, a true born Indonesian
introduces an old concept of French cuisine into a new experience of eating
French food with an Indonesian twist of flavor. Djohan’s culinary expertise
stems from her numerous research trips throughout the different regions in
Europe, Asia, United States and her collection of the Indonesian kitchen. Her
Culinary Education background at Le Cordon Bleu, Paris, where she believes can
combine the extraordinary flavors to both style of cooking. This passion to
learn from her roots has formed her career as a Chef, crafting dishes straight
from the heart. Her personal experiences, shared with great love and passion
for food can be tasted and seen at Chef’s table at Epilogue.
Andrian Ishak, A chef owner and
aspiring self-thought young Indonesian chef who experiments with scientific
techniques to bring the complexities and heritage of traditional Indonesian
food into the world of contemporary “fun dining” named Namaaz. He also
collaborated with WWF & Greenpeace, ARTE Indonesian Art Festival, Caine Des
Rotisseurs, Jakarta Culinary Festival and Heart Foundation Gala Dinner. Some of
his personal experiences were guest judge for Indonesian Masterchef 2013,
Member of Creative Council for Diageo - the world’s leading premium drinks
business and Food Stylist television commercial for Diplomat by Wismilak. Andrian’s
areas of expertise: Spherification, Distillation, Gelification, Cryogenic
Cooking, Emulsification, Dehydration, Vacuum Pressure, Filtration, Sous Vide.
Sean Macdougall
Executive
Chef Sean Macdougall oversees overall culinary department focusing on fine
dining restaurant concept, luxurious weddings, banqueting, and conference
operations of The Ritz-Carlton Jakarta, Pacific Place that will feature the
largest ballroom in Asia and many other. Chef Macdougall is an Australian
national and has gain over twenty years of cooking experience, also known as
the Executive Chef specializing in multi cuisines restaurants and banqueting.
Chef Macdougall has joined The Ritz-Carlton group in 2000 with many experiences
as Executive Chef in some big chain hotels in Asia such as in Kuala Lumpur,
Singapore, Seoul. Prior to his successful career, Chef Macdougall has also
collected his experiences from many hotel companies around the world.

Yayasan Cheshire Indonesia
Yayasan
Cheshire Indonesia is a residential and vocational training centre for adult
men and women with mobility disabilities. Yayasan Cheshire Indonesia is a
registered charity in Indonesia, located in Cilandak, South Jakarta, near Rumah
Sakit (Hospital) Fatmawati. The YCI residential home cares for 24 residents of
both sexes, all confined to a wheelchair. 90% of the residents have
disabilities caused by road or industrial accidents; the rest have congenital conditions
from polio or birth defects. The residents can learn handicraft, woodwork,
English, computer or administration with the goal that each resident is able to
gain skills and return to the community and live independently.
