The feast will be preceded by antipasti. Rosso will serve Trio di Stuzzichini; Tomato and Mozzarella Bruschetta, Broccoli Flan, Prawns Skewer paired with Vasse Felix ‘Filius’, Chardonnay, 2014 and Tartar di Salmone e Tartufo; Salmon Tartar and White Truffle Essence paired with Vasse Felix ‘Heytesbury’, Chardonnay, 2011.
Rosso will also serve Risotto ai Porcini e Quaglia; Risotto with Porcini Mushroom and Quail paired with Vasse Felix Estate, Caberrnet Sauvignon, 2014 and Pasta Ravioli allo Zafferano con coda di Bue e crema di Bufala; Homemade Saffron Ravioli filled with Oxtail in Cream Buffalo Cheese Sauce paired with Vasse Felix ‘Heytesbury’, Cabernet Sauvignon, Petit Verdot, Malbec, 2009
For the meat dish, Chef Franco will prepare Gamberoni in crosta di Parmigiano e guancia di Manzo; Tiger Prawns in Parmesan Crust served with Eggplant cake and Beef Cheek with Mixed Mushroom sautéed Sautéed Parmesan Spinach paired with Vasse Felix Estate, Shiraz, 2012.
To end the night on a sweet note, guests can indulge in a decadent Mousse e Gelato allo Champagne; Mousse and Ice cream Champagne.
