Coastal Dining with a Fresh Buzz

Seasalt opens its doors on the 20th May 2017 for public. Inspired by its spectacular oceanfront setting and the locally harvested sea salt, Seasalt will be the must-go seafood destination whilst strolling around the Seminyak area. Seasalt marks the start of a tantalizing new seascape dining experience, with a dash of Japanese infusion, exciting palates with an enticing taste of the sea in their fresh seafood selection.  

Some creations to drool over include White Snapper, Seasalt’s signature sea salt baked fish; Niçoise, the famous fresh French salad that comes with Katsuobushi and two-year-old black miso; and the beautiful Blue Swimmer Crab, where crab mayonnaise meets chawanmushi. To accompany such delish ocean cuisine, an artisanal centerpiece made of sea salt will be showcased at dinner times.  

Besides enjoying a taste of the sea, diners at Seasalt will find themselves immersed in the sensation of sailing on the ocean, thanks to its inspired design. “This restaurant was envisioned to be an extension of the ocean, sited in a manner that gives diners a feel that one is on a boat. Its layout and materials reflect the colors and waves of the ocean,” shares Gaurang Khemka of URBNarc, the architectural firm behind the design.  

Stepping into Seasalt will take you into what resembles a stylish seaside residence dominated by ocean hues and cozy décor, creatively curated by EDG. The vibrancy of an open kitchen, the changing patterns of light and shadow on the outdoor decks throughout the day, and the feel of the ocean breeze also serve to create a remarkable sense of openness and connection to the ocean for a relaxed coastal dining experience.  

At the helm – Chef Vivian Vitalis

Seasalt is captained by Chef Vivian Vitalis, who hails from Penampang in Sabah, East Malaysia. Chef Vivian began his culinary career in 2002 at JW Marriott and Ritz Carlton in Kuala Lumpur, working his way through the many leading luxury resorts across Malaysia, including Pangkor Laut, Tanjong Jara and Gaya Island resorts.  

His culinary style and skills have also been shaped alongside influential chefs such as Johann Lafer at the Michelin-starred Le Val d’Or in Stromberg, Germany, and Ito San at the award-winning Japanese fine dining restaurant Gonbei at Starhill Gallery, Kuala Lumpur.  

Chef Vivian’s culinary philosophy and passion reflect the growing trend towards a healthier, more down-to-earth lifestyle. Working with neighboring fishermen and local suppliers, he seeks out the finest seafood in the region as well as local produce. Fresh, natural and organic is the essence of his cuisine, allowing the natural flavors of the ingredients to express themselves.

OBAT NYAMUK (MOSQUITO COIL)

Kaffir lime leaf chilli paste  

15 years ago we found that most restaurants in Bali burned mosquito coil – a mosquito repelling incense, usually spiral-shaped – and put it under the table. Now, we serve the coil on the table – an edible version of it, of course. A blend of Indonesia’s native ingredients – black rice, red chilli, and squid ink for the coil; red chilli, lime leaf, onion, and cumin for the red dots resembling fire, this unique dish will certainly give you a buzz.

TURMERIC AND YUZU ORANGE SCALLOP

With apple, radish, and hibiscus salt  

Being surrounded by the Java Sea on the north, the Indian Ocean on the South, and the Strait of Lombok on the East, makes Bali’s sea the rich food source that it is. The combinations of fresh seafood and Balinese herbs result in intriguing, exotic-tasting dishes, such as this fresh scallop complemented with the earthy elegance of turmeric and the fresh, tart inspiration of Yuzu orange from Japan. We evoke this mellow taste of with from our own mixture of lemongrass, lemon juice, lime juice and Kintamani orange.  

LEMON ZEST AND ROSEMARY TUNA GRAVLAX

Stewed baby carrot, pickled red radish, red cabbage pickled purée, pickled grain mustard and belimbing wuluh  

Inspired by a Nordic dish with a twist of a popular fruit ingredient in Indonesian cuisine, belimbing wuluh (bilimbi), this fresh tuna is cured in lemon zest, extra virgin olive oil and red rosemary, and it is served with marinated baby carrot and red cabbage purée. To enhance the freshness, we put the sour taste from belimbing wuluh in the pickles.  

SOURSOP CRAB MEAT

Tangerine glister, mesclun lettuce and basil drops  

The experiment starts here. Fresh crab meat and soursop has the same texture yet the tastes are vastly different. How can we mix the ‘chicken of the sea’ and fruit? Ginger juice, local spices, lime leaf and Kintamani orange glister is a great mix that not only balances the taste, but also tickles your taste buds.  

‘3M’ COMPRESSED SQUID

Compressed squid with sea salt, chives, tamarind puree, chilli oil and squid juice  

Rujak kuah pindang (Balinese fruit salad in diluted pindang (fish paste) broth and palm sugar sauce) – a Balinese traditional food – is the inspiration for this menu. Squid pressure-cooked three minutes long with sea salt, tamarind puree, chilli oil and squid juice – fresh and chewy!  

YELLOW DUCK SALAD

Red cabbage puree, mangosteen-sage leaf, mesclun lettuce and red ginger red wine vinegar  

Ceremonial dishes are part of the richness of Bali’s culture. Betutu chicken/duck is a classic ceremonial and richly spiced dish. Based on that heritage, we create this high artistic menu that brings the distinctive flavour of betutu to your table. Our 58° C hot water bath cooking technique gives the duck tenderness and preserves the richness of betutu spices. To balance this high protein duck meat, we put red cabbage purée, buni purée and mangosteen-sage leaf. An elegant and exotic taste.      

WATERMELON SASHIMI

Mint paste, juniper berry  

Cleanse your palate with our version of sashimi. Compressed watermelon injected with juniper berry and vodka to make it more fruity and sweet, and the freshness of wasabi-look-like mint paste will neutralize your taste buds before continuing your adventure with other set menu.  

COD FISH NUMBER 7

Beetroot juice, seared asparagus, yellow zucchini purée, mussel mousseline (cod fish confit with jangu brunoise olive oil, steamed with beet root juice)  

Let us introduce jangu (acorus calamus), a Balinese traditional spice usually used to remove the “fishy flavour” in dishes. The very soft texture of cod fish is infused with jangu and extra virgin olive oil and steamed. For the side dish, we have beetroot juice, asparagus, and yellow zucchini purée to balance the deep blue sea taste and earth perfume. To enrich the flavour, we add our mussel mousseline made from green mussel, Sauvignon Blanc, and tarragon.  

CHICKEN SOUSVIDE KEDONDONG SOUP  

DECONSTRUCTED BEEF MASSAMAN

Cube roll, tamarind purée, okra, and pickled vegetables  

Boneless rib-eye meat served with tamarind purée, pickled vegetables and okra – a tropical vegetable popular in Asian and Middle Eastern cuisine. This dish has a beef demi-glace sauce simmered for 8 hours – an elegant touch to this dish, with deep and rich flavour.  

LAMB CHOP

Havana sauce, chocolate sauce, and grain mustard  

Have you imagined the exotic taste of Havana cigar on your plate? Rosemary, thyme, shallot, chives, beetroot and local spices are the ingredients for our Havana sauce, balanced with Shiraz. The chocolate sauce made with real chocolate – an additional luxury to this high-quality lamb chop.    

CASSIA JACK

Cassia, red rice, Jack Daniel’s  

The strong and unique flavour and aroma from this whiskey blends perfectly with the red rice from Tabanan, Central Bali. It has the same strong characteristic with Jack Daniel’s, a woody and earthy flavour. To add to the sweetness and richness of the drink, we add cassia, an aromatic bark, similar to cinnamon but stronger. Best served cold or at room temperature.  

KINTAMANI LEMONGRASS

Kintamani orange, lemongrass  

Besides the coffee, the highlands of Kintamani – the North-eastern part of Bali at Mount Batur caldera – is famous for its oranges. Kintamani orange is highly productive – its rind is yellow to golden yellow and easy to peel, it has high water, vitamin C, and calcium content. This sweet and fresh-tasting citrus has a long shelf life and adapts well to the highlands. We bring this unique characteristic along with lemongrass to freshen up your day.

Da Maria extends its’ music program from 7pm every night with DJs with the understanding that every night is a Friday night in Bali. Apperitivo hour in the courtyard offers the perfect pre-dinner experience with a backdrop of jazz, funk and disco to get you moving into dinner.  

Traditional Italian apperitivo derives from the concept of opening ones’ palate in an environment in which participants socialize, relax and snack as dinner approaches, unlike the commonly known Americanized interpretation of “happy hour”. Da Maria embraces this tradition in their outdoor courtyard offering classic apperitivo such as Aperol Spritz, Negronis and Americanos which are paired with Arancini Di Risso and newly added Baccala crostini with olives, fennel and extra virgin olive oil.   Move from the courtyard into one of two of Da Maria’s expansive restaurant areas, where the experienced team will guide you through the ever-evolving menu into a dinner experience with emphasis on simple, fresh and uncomplicated Italo dining.  

Dinners at Da Maria have been one of the Osteria style restaurants biggest features since opening in November and has continued to keep diners coming back for more as the food and beverage offering continues to develop, whether you’re sharing the house made gnocchi alla sorrentina or you have chosen the beautifully earthy and light crispy skinned fish of the day with braised lentils, fermented chili and rocket.  

After dinner you find yourself shifting from dining to disco with the need for one last drink in the front bar to finish the meal. This is when the evening gets underway blurring the lines between restaurant, bar and club the Pizzeria finds its’ feet with a combination of disco and house that’ll have you dancing and enough drinks will have you ordering a late night pizza from 10pm – close. Late night pizza + disco + 528Hz is a nightly occurrence and it is reflective of the notion that every night is like a Friday in Bali.  

Mixed drinks such as the NO.147 with vodka, coconut, pineapple, passionfruit, lime and falernum as well as the house favourite NO.8 with Campari, vodka and grapefruit stay true to Maurice Terzini’s classics whilst reflecting the tropical vibes of the Indonesian archipelago.

The Iconic Australian Restaurant and Bar Brings a Chilled Out Vibe to Their New Bali Pool Club

MRS SIPPY – the popular, iconic bar and restaurant in Sydney’s Double Bay – has expanded the brand to launch a stylish pool club in Bali.  A modern oasis, Mrs Sippy Bali is set to become Seminyak’s newest ‘see and be seen’ venue with a casual and relaxed atmosphere and ample spaces for swimming, sunning and dancing from day to night.   

Designed by Akin Creative, Mrs Sippy Bali is a chilled escape from the hustle and bustle of Seminyak. Local stone, timber, brick and custom tile have been used alongside bespoke lights and furniture to create a slightly retro feel with a modern vibe. The 800m2 saltwater pool and diving platform is the central focus of Mrs Sippy Bali. With soft curves, rendered edges and gentle beach entries, the pool is surrounded by Mediterranean-style architecture, daybeds, cabanas, gardens and shady palm trees, providing a multitude of open and private spaces.     

The on-site restaurant and bars feature menus and cocktails that are light, fresh and fun. With an events calendar of parties and international DJ’s, Mrs Sippy Bali will make a splash as the hottest spot on the Bali party scene.
