THE beachside village of Canggu, along Bali’s west coast, is now home to Mason—a new restaurant dedicated to the timeless craft of using carefully sourced, quality ingredients to make good food from scratch, by hand.
Mason is the latest offering from Brett Hospitality Group, the team behind the acclaimed debut of Fishbone Local earlier this year. Owners Dominique Brett, Isabella Rowell, Brant Bauer and Ben Cross have welcomed Australian chef Nathan Sasi into the fold, following stints at some of Sydney’s most esteemed eateries like Nomad and Mercado.
Nomad’s kitchen is where Sasi honed his hands-on approach to cooking, exploring ancient processes of pickling, curing and fermenting, and perfecting traditional techniques like cheesemaking and whole-animal butchery. He brings the same artisanal point of view to his new menu at Mason which, like the craft of masonry itself, is squarely focused on creations built from the ground up. Only the finest raw materials are sourced—locally and organically, wherever possible—and a pared-back approach is taken from start to finish, employing ageless cooking methods like smoking and wood-fire grilling to coax maximum flavour from minimal ingredients.
A long afternoon lunch might find the table covered in a variety of snacks ranging from wood-fired flat bread with taramasalata or brown butter and chilli-spiked hummus to snapper croquettes served with tangy lemon mayonnaise or a selection of house-made cheeses and smallgoods from the in-house butcher, such as wagyu beef pastrami, truffled mortadella and Catalan-style chorizo.
Dinner, meanwhile, might see more substantial starters like spiced calamari with romesco and radicchio or fried cauliflower paired with pine nuts and pomegranate followed by mains along the lines of wood-fired fillets of barramundi spiced with cardamom and smoked tomato, or slow-cooked lamb shoulder slathered in a classic salsa verde. Simple sides like a salad of chopped broccoli with mint and almonds, or beer-battered onion rings complete the picture, and seasonal tarts and sorbets make for a light, fitting finish.
The handcrafted aesthetic applies as much to the mood of the 100-seat restaurant as it does to the menu. Designer Kelvin Ho has created a minimal, elegant space using concrete, stone, steel and wood—elements that convey relaxed sophistication and allow the open kitchen to be the centre of attention. A hand-chiseled concrete bar makes a handsome addition, as does the terracotta strip that leads the eye across the dining room floor and into an open-air, string-lit courtyard, the perfect spot for a cold beer, glass of wine or cocktail from the concise list of no-nonsense takes on classics like sours, Martinis and Negronis.
It’s a fundamental respect for the art of craft and a hands-on attitude that defines the Mason experience, from the informed and attentive service down to the custom-made glassware and ceramics that grace the tables. Amanyangyun, Aman’s fourth destination in China, a project 16 years in the making, is now complete, and on the 28th April celebrated its Grand Opening.
Located just outside downtown Shanghai, Amanyangyun is a unique forest village of modern and historic Ming and Qing dynasty dwellings, tranquil gardens and an enriching Aman Spa. It is the result of a monumental 16-year conservation initiative which saw 10,000 camphor trees and dozens of Ming and Qing dynasty homes painstakingly transferred 700 kilometres to Shanghai from the Jiangxi Province in eastern China, where the construction of a reservoir threatened their continued existence. The internationally renowned group has performed their Zen-inspired drumming around the world for three decades. To celebrate Amanyangyun’s Grand Opening, U-Theatre’s stirring performance was choreographed around, and paid respect to, the resort’s eldest tree, the cherished ‘King Tree’, which sits at the heart of the resort, as a poignant reminder of the journey in the creation of Amanyangyun, which now safeguards priceless natural and cultural treasures.

As the drums played to awaken the spirit of the ‘King Tree’, 18 drummers slowly made their way out of Nan Shufang, Amanyangyun’s cultural complex, towards the tree, thus closing the chapter of the relocation and reconstruction that took place over the last 16 years. This scene illustrated the reunion of the antique houses and trees which once stood together in Fuzhou, Jiangxi, and now together stand safely at Amanyangyun where they will keep on recounting their remarkable journey and story for generations to come.
A key moment in the performance saw each of the drummers nourish the King Tree with water, culminating in a scene where one artist bowed down to the tree, and carefully placed both hands at its base. His ethereal voice reverberated between the trees, and spoke to the spirit of the King Tree. With it, a pulse of light shot up and suddenly connected earth, tree and man, illustrating the harmony that must exist between man and nature. The performance was a poignant reminder of the importance of nurturing the past to enrich the future.

The launch of three new Art-Deco Grand Suites on board historic Venice Simplon-Orient-Express, Belmond’s diverse range of designs honour timeless craftsmanship, celebrate heritage and tradition and look to the future working with innovative designers and local materials.
This year will see the introduction of a new era of exploration and discovery at Belmond Savute Elephant Lodge in Botswana; celebrate local culture and traditional arts in Mexico with the re-imagination of Belmond Casa de Sierra Nevada; the completion of a historical renovation of Belmond Cadogan Hotel in London as well as the opening of the ultimate in beach-chic and relaxed luxury, Belmond Cap Juluca in Anguilla.

TRADITIONAL CRAFTSMANSHIP – VENICE SIMPLON-ORIENT-EXPRESS, EUROPE
Three new private ‘Grand Suites’ launched last week aboard the legendary Venice Simplon-Orient-Express, creating new levels of luxury accommodation aboard the historic train. Named after the romantic cities to which the train travels, Paris, Venice and Istanbul; interior designs of each cabin reflect the spirit of each city whilst staying true to the original 1920s Art-Deco design.
Working with the very best craftsman including a traditional glassblower who has created the spectacular glass sinks and delicate light fixtures and famed mosaicist Jerome Clochard, an expert in the restoration of ancient mosaics, who piece by piece created the stunning patterns using marble, onyx, Venetian granite and Italian glass. Master atelier, Philippe Allemand has created the striking marquetry, an ancient skill that has passed through generations and has worked with the train since its restoration in 1997. The delicate process requires the layering of hundreds and thousands of exotic pieces of wood that are lacquered to create the most luxurious finish.
MEXICAN MASTERPIECE – BELMOND CASA DE SIERRA NEVADA, MEXICO
In April 2018, Belmond Casa de Sierra Nevada, in the heart of Mexico re-emerges from a masterful renovation as a timeless Mexican retreat. This ambitious restoration project carefully protects the property’s original 16th–18th century features whilst finding new and inspiring ways to represent Mexican traditions and modern artisans.
Opening this September, the luxurious island retreat Joali will set a new benchmark for glamour and sophistication in the Maldives, celebrating the ‘Joy of Living’ with exquisite craftsmanship, artistry and sustainability at its very core.
Meticulous thought and attention to detail will be prevalent in every facet of Joali’s impeccable offering as it seeks to offer guests of all ages a more unconventional approach to laid-back luxury: from its artful design and architecture, to its carefully curated products, in-the-moment experiences and highly personalised services.
The resort is designed in and around every tree to ensure the preservation of its delicate ecosystem, and situated on Muravandhoo Island in the Raa Atoll, situated in northern Maldives and one of the largest and deepest atolls in the world. Located close to the Equator, Muravandhoo is blessed with brilliant blue waters, unspoilt coral reefs and pristine white-sand beaches, the lush interior abundant with coconut palms.
Joali will comprise 73 elegant private beach and water villas and residences, each inspired by individual stories and featuring artisanal amenities, curated in-room libraries, thoughtful design and select objêts d’art. Four restaurants will serve guests inventive fusion cuisine from across the globe to satisfy the most discerning of palates. There will be a stylish whisky lounge, a Chocolate and Ice Cream store, a curated library, an ESPA Spa and a range of fitness and sports activities on offer. Joali will curate specialised guest experiences aimed to educate and promote greater environmental awareness.
Central to the Joali offering is its exceptional array of art and design evident in all areas of the resort, with the Joali Art Studio & Gallery at the very heart. A rostrum of visiting artists will inspire guests with interactive art projects and nature inspired collections to nourish their creativity. Dotted around the resort are also exquisite works of art and design curated by Joali and created from recycled goods by celebrated young artists. Guests can add to their own art collection and holiday memories at the Store; this will sell distinct textile products, objêts d’art from local and global artists, as well as one-of-a-kind works created at the Studio.
LUXURY VILLAS AND RESIDENCES
There are a variety of two to five room villas available, suitable for couples and families, large or small, with butler service. The Private Ocean Residence will provide guests with 500 sqm of opulent living space across three bedrooms, with three dressing rooms – each with two walk-in wardrobes – and two living rooms. Two stunning infinity pools, a butler and valet service, and an on-call Dhoni complete the offering.
With its premier beachside position, the 500 sqm Private Duplex Beach Residence will have four exquisite bedrooms allowing ample space for up to eight people and also ensuring privacy. There will also be a butler and valet service, a curated library, and a buggy and driver at the guests’ disposal around the clock. CULINARY ARTS AT JOALI
The dining experiences at Joali have been thoughtfully curated to satisfy the most discerning of foodies, and will include:
VANDHOO RESTAURANT – A specially designed dining experience encompassing flavours from across South-East Asia, China, the Mediterranean and the Levant, Guests can enjoy experiential dining, delicious breakfasts and an impressive cellar of hand-picked wines and vintages.
HER KITCHEN – A personalised culinary experience for guests to learn how to cook and enjoy local Maldivian recipes.
SAOKE RESTAURANT – Joali chose world-renowned Japanese restaurant architect Noriyoshi Muramatsu to design Saoke Restaurant replete with Kotatsu seating, elegant lounge, and Nikkei cuisine.
BELLINIS RESTAURANT – A true slice of Italy in the Maldives serving Nonna- approved dishes as well as a wide range of Grappa’s, peach Bellini’s and homemade Limoncellos.
THE MURA BAR – With cabanas and infinity pods overlooking the sandy white beach, this is the place to head for exquisite sunset cocktails and light bites. There is also a special whiskey and cigar lounge.
THE CHOCOLATE AND ICE-CREAM STORE – Set to be a big draw for both Joali’s youngest guests, and adults alike, serving a host of artisanal sweet treats.

WELLBEING AT JOALI – Achieving wellbeing is the very essence of Joali and holistically they seek to address physical ailments, emotional equilibrium and spiritual consciousness. A Wellbeing programme devised with ESPA will aim to reconnect individuals to themselves in mind, body and spirit. Inspired by the tropical surroundings, a wide range of indulgent treatments will be on offer. A fitness centre will offer expert trainers and expansive views of the ocean and the flora and fauna.
