In 1993, a private island of unspoilt tropical wilderness in the Sulu Sea, 360km southwest of Manila, was transformed from a small coconut plantation into one of the most idyllic retreats in the world. Following 2017’s anniversary celebrations in Indonesia at Amanjiwo (20 years) and Amankila (25 years), 2018 will mark 25 years since Amanpulo welcomed its first guests. This landmark occasion will be commemorated with a year-long programme of exclusive events and cultural initiatives designed to embody the spirit of the resort, pay tribute to its history, and celebrate its deep-rooted connection to the island and community of Manamoc.

BBQ’s on the 25th

Throughout 2018, guests in residence will be invited to an al fresco anniversary barbecue on the 25th of each month at Amanpulo’s scenic Picnic Grove. The resort’s chefs will come together to helm live cooking stations serving a tantalising variety of traditional Filipino flavours.

The menu will include wood-fired suckling pig, stuffed local squid, and traditional palayok (clay pot) dishes such as Laing (taro leaves braised in spiced coconut milk) and Pancit Palabok (rice noodles topped with seafood and chicharron), as well as an array of Filipino salads and desserts – including the much-loved shaved-ice specialty halo-halo.

Sailing

More than a dozen different dishes will be available, and will be best enjoyed accompanied by an exclusive Amanpulo beer, brewed especially to commemorate the resort’s anniversary by the Pedro Brewery in San Pedro City.

25-minute Cultural and Sporting Activities

A series of 25-minute activities and workshops have been developed specifically for the anniversary. These include palm-leaf weaving, a traditional Filipino craft used to make toys, ornaments, bags and accessories. Led by Amanpulo’s guides who have delighted guests over the years with gifts of their expertly woven creations, the workshops will enable participants to weave their own simple toys or, for the more ambitious, a classic Filipino palm-leaf hat.

Water Spot

For fitness enthusiasts, Amanpulo’s Fitness Manager Elmer Munar has created a 25-minute jungle sprint cardiovascular workout trail. Woven amongst the trees beside the Aman Spa, the trail comprises 13 obstacles ranging from monkey bars and a tyre run, to a rope and wall climb, and is designed to challenge strength and coordination in both upper and lower body. The trail can be adapted to meet the specific fitness needs of the individual, allowing guests of all ages and athletic abilities to take part.

Finally, in recognition of the perfect kitesurfing conditions on the Pamalican Island lagoon, Amanpulo will play host to a kitesurf retreat in March, inviting many of the world’s pro kiters and amateur enthusiasts for an unforgettable high-adrenaline regatta.

The heavyweight boxing champion takes part in the annual Dubai Fitness Challenge on the Top of Dubai’s Burj Al Arab Helipad 

Anthony Joshua put his weight behind Dubai’s drive to become the most active city in the world today, as he took part in a vigorous training session on the iconic helipad of the Burj Al Arab.  

The stunt saw Joshua follow in the footsteps of other sporting greats, Tiger Woods, Rory McIlroy, Roger Federer and Andre Agassi as he entered the world’s highest boxing ring. 

Dubai is putting physical activity firmly on its national agenda following the launch of the Dubai Fitness Challenge earlier this month.  The Challenge saw almost 800,000 participants commit to 30 minutes of activity for 30 days and take part in a packed calendar of sporting events with over 1,500 free workout classes and 75 pop up fitness locations across the city. 

Launched by the Crown Prince of Dubai, Sheikh Hamdan bin Mohammed bin Rashid Al Maktoum, the initiative was designed to encourage Dubai’s citizens and residents to embrace a more active lifestyle and take advantage of the huge range of sporting facilities across the city.

Ulu Cliffhouse, the 50,000ft² clifftop playground nestled in Uluwatu, Bali, is set to have its grand opening on Saturday 2 December 2017 with its unparalleled oceanic view, coastal-inspired kitchen creations, and imaginative tropical cocktails.

JIA, the contemporary Chinese restaurant at Shangri-La Hotel, Jakarta, will fly in expert duck roasting chef Yuan Chaoying from Kerry Hotel, Beijing to present the authentic Ya Yuan Peking Duck from 30 November to 3 December 2017.

Guests will be able to watch ‘the master’ at work as Chef Yuan Chaoying – famed for his traditionally prepared wood-fired Peking Duck – works JIA’s open duck oven.

Chef Yuan uses the finest-quality farmed duck and hang grills it to provide a thick, crispy melt-in-the-mouth experience. With over 35 years of experience, Chef Yuan invites guests to indulge in the Ya Yuan Peking Duck style, along with Chinese pancakes and buns, traditional condiments and his signature home-made duck sauce.

The special menus presented include Golden Peking Duck, Deep-Fried Duck Heart with Chilli Oil and Beijing-Style Chicken with Sweet Soya Bean Sauce. Guests may also try other specialties, such as the Four-Treasure Hot-and-Sour Soup and Fresh Stewed Sliced Fish Black Fungus in Glutinous Rice Wine.

About Ya Yuan Peking Duck

Existing since the South-Song dynasty, the Ya Yuan Peking Duck dish was originally named Zhiya. By the Ming dynasty, it was featured as one of the main dishes on imperial court menus. Containing protein, natural fat, carbohydrate, calcium, iron and vitamin B, duck meat is very nutritious and is a popular choice for those who wish to eat healthy food.

The 2.5-kilogram Beijing duck selected from Jinxing Duck Farm is the guarantee of the authenticity and tastiness of Ya Yuan Peking Duck. Authorised as the only raw ingredient, Beijing duck is fed in a special way for the quick accumulation and balanced distribution of lean meat and natural fat. This ensures that, after 70 minutes of roasting, the finished duck is thin, crispy and tender with a fine claret colour.

The traditional ‘hang-grilling’ method of duck roasting dates back 150 years, and Ya Yuan Peking Duck is carefully prepared through an intricate process of gassing, cleansing, scalding, coating, airing and water filling.

Every part of the procedure is strictly monitored and carefully undertaken by experienced chefs. In terms of scalding and airing, for example, it is critical that the chefs master the soaking time of the duck in the boiling water and the airing sequence to maintain the duck’s even and well- rounded shape, as well as achieve a crispy taste.

Ya Yuan Peking Duck adopts the use of jujube wood for duck roasting, a tradition that dates back more than 100 years. While heated, the wood gives off a clear and scented smoke that envelops the entire duck; the heat from the strong fire radiates to the top of the custom-made oven and then goes back to the duck. The fire hole is blocked by three red bricks to provide a fair and even roasting.

After 70 minutes, the finished duck is delicately sliced into breast, leg and head portions ready to be served separately. The head is cleaved from the middle, and topped with two fillets. From the head to the leg, the entire duck is presented to the guests.

Mövenpick Resort & Spa Jimbaran Bali has unveiled its new Arkipela Spa, a blissful sanctuary of wellness that showcases Indonesia’s rich wellness heritage. Arkipela Spa weaves age-old recipes and customs handed down from generation to generation to create experiences that leave guests feeling refreshed, revitalised and re-energised.

Blending the ancient wisdom of Indonesian wellness with traditional herbal ingredients, the spa reflects the true spirit of the archipelago.

Continuing its gastronomic evolution and following the successful launch of Nama, a culinary concept based on the Japanese tradition of Washoku earlier this year, Aman is taking strides forward with the launch of Arva.

Celebrating the bold flavours and simple ingredients of Italy’s rich culinary heritage, Arva has been conceived by Stefano Artosin, Regional Executive Chef of Amanpuri (Thailand), Amansara (Cambodia) and Amantaka (Laos), and Andrea Torre, recently appointed Executive Chef of Amanyangyun, Aman’s forthcoming property in China. Based on inventive cooking techniques and utilising just a few simple ingredients which take centre stage, Arva launched befittingly at Aman Venice on 1 October, and will be introduced to select Aman destinations over the coming months. Each Arva will offer a warm, convivial and welcoming environment with dishes served family style, paying respect to the roots of Italian culinary traditions.

Arva embraces the culinary history of Italy which has established a reputation for seasonal and sustainably sourced fare. This style of cuisine draws influence from Italian cooks who concocted dishes solely from what was available in the immediate gardens, forests and seas surrounding them, using their instinctive understanding of flavour and the creativity of necessity to prepare bold, heart-warming dishes that could be shared among family and friends. It is this concept to which Aman pays tribute, both in the name Arva, meaning ‘cultivated land’ in Latin and its philosophy: the shared enjoyment of uncomplicated flavours in a welcoming and congenial atmosphere.

Recently launched at Aman Venice on 1 October, followed by Amanpuri in Phuket, Amanyangyun in Shanghai, Aman Tokyo, and Aman Sveti Stefan in Montenegro 2018, the approach at each Arva will stay true to its Italian heritage, however each menu will incorporate the finest local ingredients, in keeping with the Aman philosophy of seamless integration with the destination – extracting the best of the surroundings into an unparalleled dining experience, with each restaurant offering their own take on the concept.

Arva’s co-creators, Chefs Artosin and Torre, both hail from Italy, and developing the new restaurant concept has been a passion project for them both. Chef Artosin says “For today’s travelers, Arva responds to a growing interest in tradition and provenance, balancing authenticity and sustainability to create dishes that prize flavor and quality above showmanship and theatre, and which are timeless rather than trend-led. Most of all, Arva offers honest, simple dishes which champion the incredible ingredients sourced locally.”

For Aman Venice, and in keeping with the local and familial philosophy of the concept, both chefs have worked with Creative Culinary Consultant for Aman Venice and owner of Michelin-starred D’O restaurant in Milan, Davide Oldani, and built on their relationships with local farmers, fishermen, market traders and niche suppliers to source the freshest Adriatic fish from the waters around Venice, single-source olive oils from Tuscany and Liguria, artisanal pasta, and daily produce from the Rialto market. The result is a considered selection of pastas, risottos, prime meats and seafood, generous sharing dishes, delectable gelati and sorbetti, as well as – in homage to Venice’s globally beloved cicchetti heritage – a wide range of small plates.

Located adjacent to the hotel’s magnificent ballroom, Arva at Aman Venice features dishes such as chestnut tagliatelle, a hand-made pasta with Chanterelle mushrooms and castelmagno cheese, a red prawn crudo with wild fennel and citronette, and triglia di scoglio, local red mullet with roasted cauliflower and caper leaves.     

Stefano Artosin was raised in Padua, just outside of Venice, where food was a hearty family affair, and wonderful local flavours went hand in hand with a warm and jovial atmosphere. His professional career has taken him to some of the world’s most prestigious kitchens – from St Barths to New York to Sydney and on to Thailand, where he has shaped Amanpuri’s menus for over a decade. He has been immersed in numerous culinary traditions and techniques throughout this period, but Arva is the first opportunity for him to return to the kind of cooking and eating that inspired him in the first place – friendly, familial and uncompromisingly focused on flavour.

Born in Rome, Andrea Torre has been an evangelist for sustainable sourcing and a supporter of the Slow Food movement throughout his career, beginning with his time at Alceste al Buongusto, where he oversaw the making of pasta from sourcing raw ingredients to presenting them on the plate. He brought this philosophy to the kitchens of some of London’s most celebrated Italian restaurants, including Zafferano and Cecconi’s, before returning to Italy to work with Michelin-starred Chef David Oldani, as Head Chef de Cuisine of Aman Venice. Although he is now based in Shanghai, masterminding the gastronomic offering at Amanyangyun (opening winter 2017), he is proud to leave his legacy to Aman Venice on the menus of Arva.

Following the introduction of Nama in March, the opening of Arva marks the second gastronomic launch from Aman. Like Nama, Arva will be gradually unveiled at a succession of Aman destinations: merging Italian culinary concepts with Asian ingredients at Amanyangyun and Amanpuri in November; providing an alternative dining option to guests of Aman Tokyo in January 2018, and taking the authentic tastes of Italy across the Adriatic to Aman Sveti Stefan, Montenegro, later in 2018.

They are drawn alongside international legends like Rod Stewart and The Beatles, capturing Agra’s enthusiastic embrace of all music styles and influences.

Besides the new aesthetics, Agra has also created tantalising new signature food and cocktail menus to reignite the city’s taste buds, along with an exciting weekly schedule of live entertainment, which kicks off at 8pm every night from Tuesday to Sunday.

Patrons can look forward to an evening of live blues music on Tuesday, burgers and DJ beats on Wednesday, and grills with soul grooves on Thursday.
