Chef Marco Cueva Brings The Taste of Peru to Bali

0

AYA Restaurant – Street Art Gallery

Chef Marco Cueva is a Peruvian chef with an effervescent love of cooking who is part owner of new restaurant AYA; a temple for the senses, with Peruvian fusion cuisine, international beats and eclectic global street art bringing a new level of modern street culture to the ever-cool Seminyak dining scene in Bali.

Marco Cueva’s culinary journey began in his native Lima, Peru and after graduating from culinary college it was not long before he found himself embarking on the first of many international cooking adventures, from high-end hotels in Costa Rica to his first stint in Bali at the perennial favourite La Favella, before a stint at the Royal Hideaway Playaca Resort in Mexico. But a sense of unfinished business and a desire to bring great Peruvian cuisine made from fresh local ingredients to Bali has seen him return to the Island of the Gods.

“I really love the food in Bali, with such a diverse range of flavors and available fresh ingredients,” said Chef Marco. “I love a lot of spice and by marrying traditional Peruvian recipes with the amazing local ingredients, I am creating dishes with the best of both worlds. Our dishes at AYA are presented in a very creative and ‘fancy’ way, but when you taste them it is like home, like my mother and grandmother would make, or the street vendors in Lima. I want to educate people to the wonderful varieties of flavor in Peruvian cooking, the flavors I grew up with, but with my own modern twist because for me cooking is all about flavor, flavor and more flavor.”

At AYA, Chef Marco brings his love of Peruvian street food alive with the addition of fresh, Balinese produce sourced from local growers that gives an Indonesian twist; from the vegetables, herbs and spices, fish and chicken down to the edible flowers, grown from seeds he gave to the farmers himself. Only the beef is sourced from Australia.

There are influences from the indigenous Inca population and elements introduced by Asian immigrants, with a focus on Peruvian-Japanese (Nikkei) and Peruvian-Chinese (Chifa) fusion. Chef Marco creates a convivial and welcoming atmosphere through food that is casual and designed to be shared. He welcomes interaction with guests and is more than happy to describe the dishes and their provenance from his open kitchen as he creates them. The passion and joy he brings to creating great food is contagious and on display in every aspect of his craft.

“On the menu, we have everything; fish, meat, pasta, rice, saté, teppanyaki,” continued Chef Marco. “I want there to be something for absolutely everybody to enjoy, whether they are locals or tourists and when customers come to AYA they can choose to sit at the bar in front of me in the open kitchen and we can talk about the food and what they like. Then I make it and they are happy!”

A City in Action: Dubai Fitness Challenge

0

  • Unprecedented new initiative sees Dubai aiming to be most active city in the world
  • Residents encouraged to champion the movement and commit to 30 minutes of daily activity for 30 days
  • Free workout classes, pop up fitness locations and weekend family fun carnivals taking place across the city

His Highness Sheikh Hamdan bin Mohammed bin Rashid Al Maktoum, Crown Prince of Dubai and Chairman of The Executive Council of Dubai Government and Dubai Sports Council today launched the inaugural Dubai Fitness Challenge with the aim of motivating residents to take up physical activity and making Dubai the most active city in the world. This enterprising new Challenge seeks to inspire Dubai’s citizens, residents and visitors to boost their physical activity by committing to a minimum of 30 minutes of daily activity for 30 days through a wide range of fitness activities, sports or exercise.

HH Sheikh Hamdan bin Mohammed said: “Dubai aims to set an example for cities around the world in encouraging citizens to give high importance to physical activity and sports. We are very keen to spread a culture of fitness since we strongly believe that making physical activity and sports a part of their daily routines will help people significantly improve the quality of their lives. The Dubai Fitness Challenge has been designed to motivate people to pursue an active and energetic lifestyle. This complements other initiatives we are pursuing to transform Dubai itself into the world’s happiest city by providing a positive social environment and the conditions for an enriching lifestyle.”

Running from 20 October to 18 November 2017, the flagship Dubai Fitness Challenge is the Emirate’s only multi-activity, city-wide fitness movement to date. Encompassing all forms of activity – from walking, team sports, intense fitness regimes, paddle-boarding and aerobics to football, yoga, cycling and everything in between – this will be an exciting, action-packed and most importantly personally rewarding month of self-discovery, social interaction and enjoyment for everyone of all ages, abilities and fitness levels.

It will also give participants the opportunity to experiment with new and exciting ways to improve their fitness levels, and experience the wide range of sports and exercise programmes that will be showcased across the city that they may not have tried before.

Highlights of the initiative include five weekend fitness carnivals starting at Safa Park on 20 and 21 October; celebrity guests, motivational experts and fitness professionals will make motivational appearances at various locations, dedicated events and live entertainment.

In addition to a packed schedule of daily fitness events, free exercise classes and dedicated community activities in each of Dubai’s neighbourhoods, Dubai Fitness Challenge will also feature a number of existing and highly successful partner events including Dubai Color Run, Dubai Mass Swim and Dubai Schools Fitness Games among others.

His Highness today challenged all government organisations, public sector and educational institutions to be the drivers of change. He called on them to take the lead in spearheading the fitness movement and urged the private sector to be equal contributors in this Year of Giving by supporting their employees to participate through simple actions like time allocated for exercise.

HE Helal Saeed Almarri – Director General of Dubai’s Department of Tourism and Commerce Marketing commented: “With the launch of the Dubai Fitness Challenge, we aim to become the most active city in the world, motivating everyone across all ages, and fitness levels, to start with small steps that will benefit them and their families. With just 30 minutes of physical activity each day for 30 days, we are confident that the city will begin to adopt a healthier and more active lifestyle as a choice for life.”

French “Bistronomie” by Mövenpick Hotels & Resorts

Hospitality group’s talented chefs take inspiration from global culinary movement to create seven exclusive dishes for latest food promotion

Mövenpick Hotels & Resorts is bringing the best of “bistro” and “gastronomy” to its restaurants around the world in its latest “Bistronomie” food promotion, which runs from October 20 to November 20, 2017. Taking inspiration from a trend that started in France two decades ago and has now become a global culinary movement, the hospitality group’s talented chefs have created seven exclusives “Bistronomie” dishes.

The “Bistronomie” concept was conceived in the 1990s when young French chefs with haute cuisine training re-interpreted classic dishes and served them in a new breed of casual, less stuffy, “bistro”-style restaurants.

Today, “Bistronomie” is synonymous with high-quality French cuisine with a twist and Mövenpick, which is renowned for its culinary expertise, has mastered it.

Made from the best quality ingredients and prepared to perfection, the seven dishes on its new “Bistronomie” menu include “Salade Niçoise”, “Plateau de Fruits de Mer” (Seafood platter), “Moules Marinières” (Mussels with garlic and sweet cream butter), “Cabillaud à la Bordelaise” (Cod fillet), “Pot au Feu à la Bourgeoise” (Beef topside hot pot) and “Cordon-bleu au Comté” (Veal rump steak).

In line with the company’s commitment to offering personalised experiences, the individual preferences and tastes of guests have been taken into consideration, with vegetarian options available – “Pot au Feu Végétarien” (Vegetable hot pot) – for example. In addition, some dishes such as the seafood platter are customisable to include specific ingredients selected by diners.

Guests with a sweet tooth are also in for a treat with Mövenpick’s version of “Café Gourmand” – a French take on the British “afternoon tea”. The “Bistronomie” “Café Gourmand” combines aromatic Mövenpick coffee with “Reine de Saba” (“Queen of Sheba”), an irresistible chocolate cake baked with Mövenpick’s very own 72% cocoa Swiss chocolate.

“When it comes to gastronomy, Mövenpick is a pioneer, known for its culinary innovation and ability to create classic dishes with a twist, which is very much akin to the “Bistronomie” movement,” said Olivier Chavy, President and CEO of Mövenpick Hotels & Resorts.

Thomas Hollenstein, Director of Food & Beverage Europe, Mövenpick Hotels & Resorts, who has led the team of chefs developing the “Bistronomie” dishes, added: “We have encapsulated the essence of French cuisine, but in a fresh and exciting form and importantly, acknowledging the personal tastes of our discerning diners and guests around the world.”   More information: Bistronomie

Fresh Cuisine Inspired by The Sea in The Bustling Heart of Seminyak

Urchin is a fresh, fun restaurant and bar in the heart of Seminyak that has established itself as the place to go for vibrant cuisine inspired by the sea. With a relaxed, friendly atmosphere, excellent service, modern, contemporary menu and a welcoming bar, Urchin is a hot-spot for guests to chill and soak up the Seminyak vibe whilst enjoying great food, wine and company.

Chef Gede Prandika has created an approachable and imaginative menu with a Mediterranean feel that is heavily influenced by the sea, but also offers wonderful options for meat lovers and vegetarians alike. There is an excellent selection of the freshest raw seafood but many other options besides.

From starters such as the tuna tartare cone with lime and wasabi; coral trout crudo with kemangi, sea grapes, pomelo and tobiko caviar or sushi & sashimi with house ginger through to house made pasta options such as prawn ravioli with tomato fondue and shellfish emulsion, the menu is brimming with surprises and delights.

The main course offerings are diverse with something for all tastes including seared yellow fin tuna with ratatouille and ginger yoghurt; slipper lobster with garlic, herbs, Bali rice and greens or Cajun spiced pork chop with kangkung, herb cake and Bali broth. It is recommended to leave space for one of the tempting desserts such as coconut ginger crème brulee with coral sponge, cherry and apple guava jelly. The chef has also devised a 6-course tasting menu with accompanying wines or a 3-course set dinner.

Urchin has an extensive selection of international wines from Australia, Europe and South America that has been carefully curated to complement the menu perfectly.

The open kitchen at Urchin allows guests to be an audience to the theater of food preparation as their dishes are constructed before their eyes from the tiniest ingredient up, following the various techniques employed by the kitchen crew as they meticulously prepare the food. The stars of the show are the fresh ingredients, wherever possible locally sourced.

The restaurant interiors are textured and spacious, with recycled timber tables beneath suspended lights and a clean, minimal but comfortable overall feeling, not unlike a large and welcoming seaside holiday house.

The elegant stoneware ceramics and crockery are by local supplier Kevala Ceramics, with brass artworks designed by Laurence Sanders and created by Sands Bali. Urchin has been designed to encourage long, lingering stays that have guests wondering where the night went.
